I actually made these yummy little mojito cheesecakes for my New Years Eve dinner party. We had a big bash round my friend Rachel’s house and each lady was responsible for bringing one of the courses. So I was on dessert duty.
I was looking for a dessert that wasn’t too rich – after hors d’oeuvres, starters and a big main dish, serving up a rich chocolately pudding isn’t what people want.
This mojito cheesecake recipe is light and refreshing – the perfect finale to a wonderful meal. It was also good fun and easy to make.
Smash up the almond thins. Smash ’em up to smithereens!!
Pour in the melted butter (I actually didn’t think this was enough, so melted some more just to make sure I had a good, proper buttery biscuit base!
Grate the zest from three limes….
…then juice them and add the juice to the zest.
Then add 5tbsp of water to the sugar, boil for two minutes without stirring. Whilst it’s boiling, add the rum and mint leaves to the lime mix.
Pour this concoction into the boiled sugar and leave to one side.
Then sieve the cottage cheese – yes, sieve it! It took bloomin ages, but with a bit of elbow work you can manage to sieve it all so it’s a thick, smooth cheesy paste. Then add the marscapone cheese and stir together to form a smooth mix.
Then pour the sugar/mint/rum/lime mix into the cheese via a sieve and stir together.
Yup, it looks rather gross, but once it’s all mixed together it’s fine! Distribute evenly to all the prepared base dishes and pop in the fridge for at least an hour.
Once it’s ready to serve, whip up the whipping cream.
I find it best to try and pull as many Nigella-esque faces as possible. The liberal amounts of wine definitely helped with this!
Add a blob of cream to each dish, sprinkle some extra grated lime and serve with a little slice of lime.
Done. A delicious desert – simple and fun to make.

- 150g thin almond biscuits
- 25g butter, melted
- 4 limes
- 100g light muscovado sugar
- 4 tbsp rum
- Large handful of fresh mint leaves, plus extra to decorate
- 400g cottage cheese
- 250g tub mascarpone
- 150ml whipping cream
